We have are recruiting a Fine Dining Operations Manager to be based at Ascot Racecourse. This exciting opportunity involves managing the food and beverage operation in the Fine Dining department to the agreed standards. You will also aim to maximise the profitability of the Fine Dining department and work closely with all departments to share best practice across site.

Competitive salaryMain responsibilities
Identify profitable growth opportunities through innovation and sharing of best practices within the Fine Dining operation
Manage clients expectations both internal and external
Ensure your account is performing within the agreed KPIs at all times to meet Sodexos commitments
Take overall responsibility for managing the variable costs within the Fine Dining budget
Ensure that clients receive best in class service delivered within contractual terms and in a cost effective manner
Develop and recruit a strong Fine Dining team of casual managers and staff with specific focus on consistency
Monitor KPI reporting for your account, reviewing contents of client meetings and delivering actions
Implement training program in all fine dining areas
SOPs are up to date, implemented and referred to and signed off throughout all race days
- Operational knowledge, skills and experience in fine dining
- Logistics sense for efficient set up and breakdown of events
- Management of multiple Profit and Loss Accounts
- Management of a large and diverse casual team
- Excellent communication skills
- Experienced in using Microsoft Office
- Good standard of literacy and numeracy
- IOSH managing safely qualification
- CIEH Level 3 qualification
